Chicken Cordon Bleu

4 chicken breasts
2 thin slices of Black Forest ham, cut in half
4 slices Swiss cheese
salt, freshly crushed black pepper, thyme and rosemary
1/4 cup melted butter
3/4 cup seasoned panko breadcrumbs (if you can't find seasoned panko, just buy the plain and add about 1 tablespoon of Italian seasoning)

Place each half between sheets of plastic wrap, skinned side down, and pound with meat mallet to about 1/8 inch thickness. Sprinkle each chicken breast with seasonings. Place one slice of cheese followed by one slice of ham on each chicken breast then roll (jelly roll style) and secure with toothpicks. Dip each roll in the melted butter, then roll in breadcrumbs making sure to coat the entire roll. Place rolls in baking dish and bake at 400 degrees for about 40 minutes. Serve with the following sauce:

Cordon Bleu Sauce

1 can cream of chicken soup
1/2 cup plain yogurt
juice of 1/2 of a lemon

Blend ingredients and heat over medium heat until hot. Pour over chicken rolls.
