Healthy Choco-Peanut Butter Granola Bites

2 cups oats
1/4 tsp salt
1/2 cup shredded coconut
1 cup sliced or chopped almonds
1/2 cup honey
1/4 cup coconut oil
1/2 cup creamy peanut butter
1 teaspoon vanilla
1/4 cup cocoa powder

Mix oats and salt.  In large skillet, over medium heat, add coconut and almonds.  Toast for about 6 minutes or until coconut and nuts begin to turn golden. 
In medium skillet, combine honey, coconut oil, peanut butter, vanilla, cocoa powder over medium heat and whisk until smooth. 
Pour chocolate mixture over dry ingredients and stir until well combined.  Using a cookie scoop or your hands, roll into bite size portions.  Place on cookie sheet and refrigerator for half hour.
Store in refrigerator in an air tight container for two weeks (can freeze and store for up to two months). 

NOTE:  unhealthy variation:  add 1/2 cup chocolate chips to dry ingredients and 3 tablespoons cacao nibs to melted ingredients.
