Caldo de Pollo (Cuban Style Chicken Noodle Soup)


2 chicken breasts, shredded
2 8oz cans tomato sauce
1 Sazon Goya packet (seasoning found at any grocery store)
Salt to taste
1/2 onion, chopped
3 large carrots, sliced
1 large potato, peeled and cubed
5 cups chicken broth
5 cups water
1 1/2 tsp oregano
Juice from half a lemon
8 oz dried spaghetti noodles, broken into bite-size portions 
Optional: Freshly chopped cilantro

1- In a large pot, add your cooked shredded chicken, onion, potato, carrots, tomato sauce, salt, Sazon packet, chicken broth and water.

2- Stir and bring to a boil.  Once at a rolling boil, cover with lid and reduce heat to a medium-low and simmer for 15 minutes or until potatoes are almost cooked through.

3- Add spaghetti noodles and continue to cook until noodles have cooked through.

4- Add lemon juice to the pot right before serving. Garnish with cilantro.
