Caprese Grilled Chicken Sandwiches w/ Balsamic Roasted Tomatoes and Mozzarella


 (makes 4 sandwiches)
Ingredients:
  • 8 slices sourdough bread
  • 2 chicken breasts, butterflied
  • 5 roma tomatoes, sliced
  • balsamic vinegar
  • olive oil
  • 8 oz. fresh mozzarella, sliced
  • 2 large handfuls basil leaves
  • salt and pepper to taste
NOTE: easy to make vegetarian by skipping out on the chicken

Directions:
  1. Marinade butterflied chicken breasts in olive oil, balsamic oil and salt & pepper.  The longer you can marinade, the better.  Grill chicken right before assembling sandwiches.
  2. Place the sliced tomatoes on a flat pan greased with olive oil. Drizzle the tops with a little olive oil, salt and pepper, and balsamic vinegar.  placed thinly sliced mozzarella on top of the tomatoes.
  3. On the broil setting, bake the tomatoes and cheese in the oven for about 3-5 minutes, checking occasionally to make sure the cheese isn't burning.  Broil until cheese has melted and has begun to brown just slightly.
  4. Place a few basil leaves on each slice of the bread.  Add the roasted tomatoes, mozzarella and grilled chicken.
  5. Enjoy as is or feel free to grill on a panini or foreman grill for several minutes.
