Carne Guisada ( Guatemalan style stewed beef)

Serve w/ rice & beans or in tortillas along w/ slices of avocado. 

2-3 pound roast (chuck or rump)
8-10 garlic cloves, minced
1/2 onion, sliced
2 bay leaves
3 fresh thyme sprigs
cinnamon stick
sat & pepper to taste
1 15 oz can tomato sauce
1 8oz can tomato sauce
juice of 3 oranges
2 tsp Maggi's seasoning (concentrated beef bullion found at most grocers)

Brown roast in hot oil.  Transfer to crockpot.  Add a bit of oil to the same pot and saute garlic & onion.  Add remaining ingredients and stir well.  Pour over roast in crock pot and cook on high for about 4 hours.  Remove roast from crockpot and cut into desired slices/portions.  Place back in crockpot and cook on low for another 4 hours, or until tender.  Serve w/ rice & beans or in tortillas along w/ slices of avocado. 

NOTE: the cooking time varies depending on the roast.  If you prefer to leave the meat in the crockpot all day for a no fuss approach, that would work fine too.  Rather than slices, the meat will just be shredded which is just as tasty!
