Super Moist Pumpkin Muffins

Make muffins or a 9x13 pan of this moist quick bread- recipe courtesy of Cami Farr's dad!

Image result for pumpkin muffins3 Cups sugar (I use a natural sugar substitute or a blend of sugar and a natural substitute.  Monkfruit is my favorite and can be purchased on Amazon.)
2 Cups flour
1 Cup oil (I used avocado oil)
29oz can of pumpkin puree
3 Eggs
1/2 Tablespoon salt
1/2 Tablespoon baking soda
1 1/2 Tablespoons cinnamon
1 1/2 Tablespoons nutmeg

Spray either muffin tins or glass 9x13 casserole dish with oil and bake for 30-60 minutes at 350 degrees.  The temperature varies based on whether you're making muffins or a 9x13 pan.  Just keep an eye on it!  ;)
